In this short entry, I introduce with you how to make beef Pho noodle soup according to Hanoi’s way. Hanoi’s Pho noodle soup is the most famous in Vietnam.
Recipe to make noodle food according to style of Hanoi – One of the best places to visit in Vietnam
Ingredients for 7-8 bowls of Pho noodle soup:
- Leg bones: 3 big pieces. The bone that’s at 12-o’clock position is a leg bone that contains marrow. The marrow is good and sweet, but very fatty. You have to scoop out the marrow with a small spoon or knife and discard after the broth is boiled and appear on the surface of the broth.
- Beef round rump roast boneless: 400-500gr
- Black pepper.
- Coriander seeds: 1 teaspoon
- Coriander leaves
- Rice noodles (in case of dried up noodles, you need to soak in water)
- Spring onion
- Chili sauce
- 6-7 shallots
- 1 big onions
- 1 big ginger
- Rock sugar
- Fish sauce, salt, seasoning
Clean the bones. Boil the bones the first time, add 1 teaspoon salt into the boiled water and simmer on low heat in 5 minutes. You will see small foams emerging on the surface of boiled water which caused the broth smelly. Discard this boiled water.
Clean the bones and simmer the second time. Add a teaspoon of salt into the pot. It takes about 45 minutes simmering with pressure cooker, and 2 hours with normal pot.
While waiting for the bone broth, slice onion, shallots and ginger with thickness of 0.5cm.
Roast sliced onion, shallots, ginger on a small heat until all are scented.
Put other ingredients: Coriander seeds, Cloves, Cardamom, Cinnamon, Anistar in a pan and roast on a small heat until all are scented.
Put all roasted ingredients into a cloth bag and put in broth pot so that the broth will not be opaque. Add more water to get 5 litters of broth, 3-4 tablespoon of fish sauce, 1 tablespoon of salt, ½ teaspoon of pepper and seasoning.
Beef should be sliced as thin as possible. I always throw the whole chunk of meat in the freezer for 15 minutes to make it easier to slice thinly. Then beef will be dipped in boiled water and lift out immediately to keep it tender.
Noodles are also dipped in boiled water and then divided into serving bowls. This aims to keep the heat of Pho noodle soup bowl. Top with beef. Pour the hot soup evenly among each serving bowl. Top with spring onions, chili or chili sauce and coriander leaves.
